Stainless steel, to be totally nerdy about it, is iron with at least 10.5%
chromium. If you look on your cookware there will usually be a measure of
its chromium content - cookware steel quality is measured by how much more
than 10.5% Cr it has. Iron with nickel in it is... well, iron with nickel
in it.
